How to make Ultimate Omelette :

  • Brown the sausage
    Cook crumbled breakfast sausage in a skillet until nicely browned; drain.
  • Sauté the veg
    In a little butter/oil, sauté mushrooms with the fire-roasted peppers & onions until tender; season lightly. Stir in diced tomatoes just at the end to warm through.
  • Cook the eggs
    Beat 3 eggs with a pinch of salt and pepper. Melt a little butter in a nonstick pan and pour in the eggs. Let them set, lifting the edges so uncooked egg flows underneath.
  • Fill & fold
    When the top is still slightly soft, scatter the cheese, cooked sausage, and vegetables over one side. Fold the omelette and let it sit a minute so the cheese melts.
  • Make the sides
